Chef Clayton’s Southern Egg Salad and Pimento Cheese Recipes

egg salad blogFor golf fans, the weather is shaping up to be a beautiful weekend at Augusta. And in celebration of the annual event, we asked our Good Heat Chef, Clayton Sherrod for his favorite Pimento Cheese recipe and Egg Salad recipe. So sit back, enjoy a weekend of golf with a homemade Pimento Cheese Sandwich or Egg Salad Sandwich, or both!

Chef Clayton’s Southern Egg Salad

6 Hard cooked boiled eggs, diced
1/2 cup diced celery
2 1/2 tbsp mayonnaise
1 tsp yellow mustard
2 tsp white vinegar
Dash cayenne pepper
1 tsp grated vadalia onion
1/2 tsp worcestershire sauce
Salt & pepper to taste

Place all ingredients in a mixing bowl. Combine until well mixed. Chill.

Makes approximately 2 cups

Serve between 2 slices sandwich bread. (untoasted for authenticity sake)


Chef Clayton’s Southern Pimento Cheese

2 cups grated sharp cheese
8 oz cream cheese
1/2 cup mayonnaise
1/4 tsp. garlic powder
Dash ALAGA hot sauce
Dash Worcestershire sauce
1 tbsp. grated Vidalia onion
4 oz. pimentos, drained
Salt & pepper to taste

Mix cheddar cheese, cream cheese, mayonnaise, garlic powder, Alaga hot sauce, Worcestershire sauce, grated Vidalia onion and pimentos in a mixing bowl. Mix until well combined. Salt & pepper to taste.

Makes 3 cups

Serve between sliced sandwich bread (untoasted for authenticity sake).
