Homemade Tomato Soup

You can’t get tomatoes any fresher than right now. And, Pepper Place Market has plenty of beautiful homegrown tomatoes ready for you to take home. One of our employees (Eric Holsomback) dabbled with a few tomato soup recipes and created a mighty delicious, yet simple tomato soup recipe. This would be an excellent recipe for freezing for the fall. Try it and let us know what you think.

 

 

Tomato Soup

2 lbs tomatoes (quartered)
1/3 cup real butter
1 medium onion, chopped
2 cloves garlic, minced
2 sprigs of oregano, fresh
2 sprigs of thyme, fresh
1 ½ teaspoons salt
2 teaspoons sugar
1 cup chicken stock
2 cups water
1/4 cup heavy cream

In a large heavy pot, melt butter over medium heat. Add onion, garlic, oregano and thyme. Cook until onion is soft and light brown. Add tomatoes, chicken stock, water, sugar and salt to pot. Simmer for 20 minutes pulling out tomato skins as they fall off. Puree soup with an immersion blender. Add heavy cream. Stir. Enjoy.
