Place eggs into a one quart sauce pan. Add enough cold water to cover them a half inch. Bring water to a boil over high heat. Once water is boiling, reduce heat to moderately high and cook eggs at a gentle boil uncovered for 10 minutes (you can overcook an egg, so be careful). Pour off hot water. If you plan on using the eggs right away, gently crack them by bumping them into one another inside pan. If using them later, run cold water over the eggs and add ice to stop the cooking process. Allow eggs to cool for 15 minutes.
